What exactly does it do?

Heya!

I'm having some trouble figuring out what exactly military does. It doesn't say in the manual and the game is not superclear on it. I guess it has to do with how easy you're 'invaded', but does it have more uses?

There are two ways.

Military Production is the amount of production that goes into building any ship. Certain races can get increases in their military production (Drengin and the like) but have poor social (buildings on planets) production.

Military Buildings, there are several buildings that are military types. They can enhance your planets ability to fend of invasions (planetary shield, etc) or help with the production of Military ships (the Hyperion buildings). Some buildings have Military Adjacency bonuses which help increase these buildings and/or certain tiles will also have these bonuses.

Thanks, so what does Helios ore do exactly? It gives +2 to military. Does it just mean it gives +2 to all military buildings, or is there some sort of 'military' stat that does something?

Military buildings built adjacent to the tile containing Helios Ore will have an additional 2 levels. What effect this has will depend on what the building does; for example, the Hyperion Logistics System provides +1 logistics per level while the Hyperion Shrinker increases hull capacity by 5% per level.

Helios Ore additionally provides +5% hull capacity per resource, regardless of what is built around it.
