the big problem with tf mid (and it's always ap tf at high levels) is that he's incredibly susceptible to ganks. He's very strong with his ult and wave clear and stun. But those 2 seconds he's in range, he can die. Or even at tower. The game that you missed where you thought CLG would beat Curse based on matchup had ap tf mid, and they exploited that weakness. in the competitive scene, switching top and bot happens often enough. The best time to do it is when they pick a champ that absolutely sucks 1v2 (i.e. fizz). Another strat that was incredibly successful for m5 was roaming ali + urgot solo bot. duo-queue system is a little more weird than that from my experience. a 2000 and 1300 elo duo were in my 1700-1800 elo games. Sometimes when I duo-queue with someone else in 1800's (currently ~1850), we'll go up against people as high as 2200.
pacov what you're forgetting to realize is that if you have a complete retard on your team in the sense that you mean "doesnt get cs, dies over and over" then you start to play carry support. It doesn't matter what role that person was going to play in your game, they were going to fail. It was a 4v5 to begin with, and ANY support can still carry (sup carry taric here np). The ELO difference between first and last pick is so minimal that it really doesn't matter. The higher up you go, the more you see a Janna or ad carry first pick. Sometimes they pick a champ that can go top / mid, or top / jungle.
lane trundle is pretty underrated at the moment. He has great sustain in lane. A well placed pillar can completely control a team fight, and if he ults a super tanky champ (like a rammus / amumu / udyr / ww) they can die like an ad carry while trundle becomes super tank np. However, he's susceptible to being kited and doesnt have an immediate gap closing mechanic to jump on an ad carry.

what I do for matchups where I'm unfamiliar with them: google ____ vs _____ and there is usually a thread on the forums asking opinions about who should win. It's not definitive obviously, but combine that with my general knowledge and it's good enough for me. Most of it comes from personal experience tho.

Someone you haven't mentioned but is an incredible tower killer / backdoor kind of guy: Twisted Fate. He can't do it all that well w/out creep support, but who cares? He can push waves / clear waves incredibly fast, and he has an ultimate to get him to a tower location where creeps are already pushing to it. Give him a lichbane, and he's one of the very best at backdooring. Reason being that he can proc lichbane on cd even w/out creep
